One of the recipes in Nancy’s book, as well as our podcast, is her recipe for chili:
CHILI
Ingredients
1 green pepper, chopped
1 can of tomato pieces (add more if needed for more tomato taste)
1 tablespoon of chili powder (add more for spicier flavor)
1 can of kidney beans (can use two cans of beans, also)
1-1½ pounds of ground hamburger, cooked
1 yellow onion, minced
1 large can of tomato juice
Directions
Cook hamburger, onions, and green pepper together in skillet until hamburger is browned. Stir frequently. Drain and put ingredients in large soup pot. Pour in can of kidney beans including sauce and the tomato pieces. Stir ingredients together. Pour tomato juice in enough to cover ingredients and how liquidly you want the chili. Stir together. Pour in one tablespoon of chili powder. Stir together. Cover the pot. Cook over low heat until warm enough to serve. Serves 4.
